Slow Cooker Chicken Tortilla Soup

Ingredients

  • 1 lb. boneless skinless chicken breasts
  • 1  15-oz. can Black Beans, rinsed
  • 1 c. frozen corn
  • 2  bell peppers, chopped
  • white onion, chopped
  • 15-oz. can fire-roasted tomatoes
  • 1/4 c. freshly chopped cilantro, plus more for garnish
  • cloves garlic, minced
  • 1 tbsp. cumin
  • 1 tbsp. chili powder
  • 1 tsp. kosher salt
  • 2 c. low-sodium chicken broth
  • 1 tbsp. extra-virgin olive oil
  • Lime wedges, for serving

Directions

  1. In a large slow cooker, combine chicken, black beans, corn, peppers, onion, fire-roasted tomatoes, cilantro, garlic, cumin, chili powder, salt, and chicken broth.
  2. Cover and cook on low until chicken is cooked and tender.  Should take between 4 to 6 hours.
  3. Shred chicken with a fork and return to crock pot to combine.
  4. Serve soup topped with, avocado, light sour cream (or plain greek yogurt), cilantro, and lime.

Easiest Two Ingredient Stir Fry Sauce

Ingredients

  • 1/3 cup low sodium soy sauce or liquid aminos
  • 1/4 cup sesame oil

Directions

  1. Add all ingredients to a mason jar, seal with a lid and shake shake shake.
  2. Add to sliced veggies and protein of choice until tender.
  3. Top dish with sesame seeds and serve!

 

Honey Sriracha Oven Baked Salmon

Ingredients:
  • 1 lb boneless salmon fillet
  • fresh chopped cilantro (optional)
Glaze Ingredients:
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 2 tablespoons sriracha sauce
  • 1 tablespoon soy sauce or liquid aminos
  • 1 1/2 tablespoon honey
  • 1 tablespoon rice vinegar (I used apple cider and it worked fine)
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds (prefer a mix of black and white)

Directions:

  1. Preheat oven to 425ºF.
  2. Line a baking sheet with parchment paper and lay the salmon fillet on top. Season with salt and pepper.  Cover salmon with another piece of parchment paper and bake for 8-10 minutes.
  3. Put all the ingredients for the glaze except sesame oil and seeds, in a pan and bring to a little boil. simmer, stirring, until sauce has thickened and reduced to a thicker consistency. Set aside in a clean bowl and stir in sesame seeds and sesame oil.
Glaze:
  1. Coat the top of the fish with the glaze mixture, spread evenly.
  2. Return salmon in the oven for 4-5 minutes, until cooked through.
  3. Serve with fresh cilantro.

Easy Mexican Stew

Ingredients

  • 2 tablespoons olive oil
  • 1 ½ pound of top round sirloin, diced
  • Salt to season
  • 2 garlic cloves, minced
  • 1/2 tsp black pepper
  • ½ teaspoon ground cumin
  • ½ large white onion, diced
  • 1 green or red bell pepper, diced
  • 2 14.5 oz cans of fire roasted diced tomatoes
  • Water as needed

Directions

  1. Heat oil (or lard) in a deep skillet, at medium-high. Season the meat with salt and add to skillet.
  2. While the meat is cooking, mix the garlic, pepper, and cumin in a small bowl. Add 2 tablespoons of water to the mixture to form a paste. Add it to the steak and stir.
  3. Cook for 5 more minutes and lower the heat and place the lid to simmer.
  4. Cook the meat for about 15 minutes and before all the liquid cooks out, add onion, pepper, and jalapeno, cooking for 3-4 minutes.
  5. Add tomatoes, stir to combine and cover, simmering for 10-15 minutes.
  6. Check the meat, looking for fork tender.
  7. Season with salt a few minutes before it finishes cooking. Serve warm and optionally top with avocado.

Crockpot Turkey Breast

Ingredients

  • 1 (5-6 pounds) bone-in turkey breast, thawed
  • 4 stalks celery
  • 2 yellow onions
  • 2 carrots
  • 1 cup chicken broth
  • 2 tablespoons butter
  • 4 tbsp olive oil

Seasonings (This is subjective – use what you have)

  • 1 tbsp garlic powder
  • 1 teaspoon sea salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon dried oregano 
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon dried sage
  • 1/4 teaspoon dried thyme

Directions

  1. Pat turkey with paper towels.
  2. Spray a large crockpot with nonstick spray. (A 6-quart crockpot works well)
  3. Place celery and 1 onion cut into 4’s and roughly chopped carrots to the bottom and add chicken broth or water.
  4. Cut the other onion in half and place inside the turkey with 2 tablespoons butter.
  5. Coat turkey with olive oil.
  6. Stir together all of the seasonings and rub all over the turkey. If leaving the skin on, make sure to rub the seasonings under the skin.
  7. Place the turkey breast, BREAST DOWN on top of the vegetables. Make sure the turkey is elevated on top of the onion/vegetables.
  8. Cover the crockpot and cook on high for 1 hour and then low for 5-7 hours or until the turkey’s internal temperature reaches 160 degrees.
  9. Remove the turkey from the crockpot and turn so it is breast up.  Carve as usual.
  10. Serve with gravy of choice.  You can use the crockpot drippings or use store-bought.

Garlic Herb Chicken and Veggies

  • 6-8 boneless skinless chicken tenders
  • 1 pound zucchini, cut into half moons (Asparagus, peppers, etc work here too)
  • 3 tablespoons olive oil divided
  • 1 tablespoon minced garlic
  • 1/2 teaspoon dried basil 
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon onion powder
  • salt and pepper, to taste

Instructions

  • Season chicken with salt and pepper on both sides.
  • Heat 1-2 tablespoons olive oil in a large skillet over medium-high heat. Stir in garlic and herbs and cook another minute or so until the garlic is fragrant.
  • Reduce heat to medium, add chicken to pan, and cook for 5-7 minutes, then flip and cook another 5-7 minutes.
  • Move chicken over to the side and add remaining 1 tablespoon of olive oil to the empty part of the pan.
  • Add zucchini and season with salt and pepper.
  • Cook for 4-5 minutes until tender and chicken is completely cooked through.
  • Serve immediately!
